Ascorbic acid is an organic acid that can be present in four different forms. However, of these forms, only L-ascorbic acid is biologically active. The L-ascorbic acid and its derivatives with the same effect are summarized under the name vitamin C. Due to the easy oxidizability of vitamin C, it acts as an antioxidant or as a radical scavenger in the organism. In addition, it is an essential coenzyme in the process of biosynthesis of collagen. Since collagen occurs mainly in connective tissue, but also in practically all other human and animal cells, scurvy can occur with a lack of vitamin C, whereby on the one hand the connective tissue is affected and on the other hand symptoms such as exhaustion and fatigue can occur.

Historically, a vitamin C deficiency was particularly relevant for sailors, as the usual, typically very grain-heavy food contained only very small amounts of vitamin C and therefore scurvy often occurred. For prevention, pickled cabbage was later taken on ship trips due to its high vitamin C content. In the diet, vitamin C is mainly found in fruits and vegetables. Especially citrus fruits such as oranges, lemons and grapefruits usually contain a lot of vitamin C. In vegetables, kale, red cabbage, white cabbage and pickled cabbage in particular have a high vitamin C content.
