Quercetin is a secondary plant substance from the group of polyphenols that has antioxidant properties. The natural substance has a yellowish colour and is mainly found in onions, broccoli, apples, grapes, black and green tea. Quercetin is mainly found in the outer layers of the plant. This is why the quercetin content of many foods decreases sharply depending on how they are prepared. For example, most of the quercetin is lost when vegetables are peeled.
