Green coffee beans are the unripe, green fruits of the coffee bush. Green beans retain significantly more valuable ingredients than roasted beans. Although you could also drink green, unroasted coffee, it tastes slightly grassy and sour. The pleasant taste of the coffee is only created by roasting, but valuable ingredients are destroyed in the process. For example, 70% of the valuable chlorogenic acid is lost during the roasting process. In addition, the proportion of the amino acids arginine, cysteine, histidine, lysine, serine and threonine decreases.
